Got cabbage?

We made Neen's recipe for stuffed cabbage casserole last week for Blessed Hope.

The easy recipe is:

Brown    two lbs. ground beef with two onions, we used med. large ones
add 1 and 1/2 cups uncooked rice
2 cans of tomato soup
2 cups hot water

Simmer it for about 10 minutes and pour it over a nice layer of cabbage.  I just sliced the cabbage.
Cook it for 1 and 1/2 hr at 350 degrees.  We covered it while it was baking. Everyone liked it and Rose and I made three recipes that filled the oven with a small one left over, which we took to Neen, after all it is her recipe.  Have you ever made it?

I copied this quick and simple recipe for future use. I have made stuffed cabbage for years and everyone likes it but it is a lot more work. Hope you have a terrific Tuesday.

I tried a similar recipe, but just chopped the cabbage and sauted it with the g.beef and added hot salsa on top. Quick and easy, more of a kick. I didn't have any rice and it worked out okay. I love this . xoxo,Susie

My stomach started growling while I was reading your recipe Peggy! My mom used to make this and wrap the meat mix in a cabbage leaf, securing with a toothpick. She called it "Pigs in a blanket". Good with warm homemade bread & butter! ~*~Lisa
